Recipe: Fiesta Tacos

Recipe Title: Fiesta Tacos

Ingredients: 

  • Ground Beef (the cheap stuff is the best, the fattier the better. You will cook the fat out.)

  • Taco seasoning packets (one for each pound of ground beef plus 1 if cooking black beans. I cook about 1/2 lb per person)

  • Salsa (small one can work but if using on top of tacos, get more)

  • Black beans (canned work well for this)

  • Lettuce

  • cilantro

  • parsley

  • tomatoes

  • onions

  • cheese (shredded)

  • nacho con queso cheese

  • sour cream

  • tortilla shells

  • Tortilla chips

  • anything you like your tacos on.

Directions: How to make:


1. Place ground beef in a large pot of lukewarm water.

2. Boil meat, breaking it apart until it is mush (yes I know this looks and sounds gross but it will come out amazing, I promise)

3. While meat is cooking, cut up vegetables to bite size amounts.

4. Heat up black beans with one packet of taco seasoning.

5. When meat is a brown color and all red is gone, turn off the burner, and strain meat in a colander.

6. Place meat back into pot. Stir in the taco seasonings and black beans.

7. Add salsa to mix the seasonings together. Be careful not to make the mixture too wet. If this happens, turn on the heat to cook out the moisture.

8. There, the hard part is over. Now you just put your tacos together. Personally, I like to heat up the tortillas on a pan before adding all my stuff together.

Extra Info: This meal can go a long way when you add black beans.

I have also tried this with corn for a more "tex-mex" taste. It was very satisfying.
